South Indian Chicken Curry with Spinach and Ginger

Stumped on what to cook for dinner? Try this surprisingly speedy South Indian Chicken curry recipe for a fuss-free weeknight warmer that you’ll be making time and time again.

Ingredients

1 pack of The Spice Tailor Keralan Coconut Curry
1 tbsp. vegetable oil
3cm ginger, peeled and thinly sliced
250g chicken breast, diced
100g baby spinach
To garnish (optional)
1 thin green chilli, thinly sliced (optional)
small bunch of coriander, finely chopped (optional)

Tips and Inspiration

This is a superb way to cook with chicken and paired with this mellow, coconut curry, the result is such a comforting and wholesome dish for all to enjoy. For an added kick, we top with green chilli and chopped coriander, but this is optional.

Method

Step One

To prepare the curry, place a pan over a medium high heat and add 1 tbsp. of vegetable oil alongside the spices from the spice sachet in the kit.

Step Two

Add in the ginger and fry until fragrant. Then add the chicken and cook for a few minutes until the chicken is golden on the outside.

Step Three

Stir in the sauce from the sauce pouch along with 50ml of water and simmer for around 5 minutes, until the chicken is cooked through. Stir through the spinach for a minute or so before serving so that it has just wilted.

Garnish with the sliced chilli and coriander if you like.

 

Please ensure food is cooked through and piping hot before serving.
