This quick midweek meal is definitely one to add to your rotation. The rich, creamy tomato tikka masala sauce pairs perfectly with buttery paneer. A great recipe for everyone to enjoy.

This classic vegetarian dish delivers every time! A great meat-free Monday recipe, and one for all the family to enjoy. Paneer is quickly becoming the vegetarians go to for a filling protein-packed meal and it truly shines in this dish. We have added some simple but delicious roasted cherry tomatoes and they bring a burst of sweet freshness to the dish. Finish with a knob of butter and some chopped fresh coriander for that restaurant-style dish.
Ingredients
  • 1 pack of The Spice Tailor Original Tikka Masala 
  • 1 tsp. olive oil
  • 10-15 vine tomatoes
  • Sea salt
  • 1 tbsp. vegetable oil
  • 200g paneer, diced

Optional: Indian flatbreads or rice, coriander to garnish

Method
  1. Preheat your oven to 200ºC/180ºC fan assisted /Gas Mark 6. 
  2. Drizzle 1 tsp. of olive oil across the tomatoes. Place on a baking tray and pop into the oven until lightly blistered, approx. 10-12 minutes. Sprinkle with a bit of sea salt. 
  3. While the tomatoes are cooking, place a pan over medium-high heat and add in 1 tbsp. of oil. Add the spices from the spice pouch and cook for 20 seconds before adding the paneer. Gently sear the paneer on both sides, then add in both sauce pouches and a splash of water, and simmer on a medium heat until the paneer is soft. 
  4. Serve the paneer tikka masala with the roasted tomatoes on the side, and your choice of Indian flatbreads or rice.

Some flavours combinations are classics for a reason. The combination of intense tomato flavour mellowed with a little creaminess and reincarnated in India with some subtle spicing and flavours, is what makes this dish one of Britain’s favourites. It certainly gets our vote at least once a fortnight!

There are rumours that chicken tikka masala came to life when diners asked a local Indian chef for some sauce to go with their tandoori chicken tikka pieces. The chef added a standard tomato masala and some cream and created this delicious new dish. Despite Indian food moving towards regionality over the last 2o years, it remains one of our preferred curries!
