Cooking a Malabar Curry for 2


Heat 1 tbsp oil and fry 1 small, finely chopped onion. Add in and cook 3 chopped garlic cloves.

Add 1 large, chopped tomato and 1 tbsp tomato purée. Cook, while stirring, until thick.

Add 200g seafood, chicken, meat or veg and 3 tbsp Malabar paste. Cook for 1 min.

Add 100ml coconut milk and a splash of water and simmer urtil cooked.

For a Classic Malabar Curry for 2 using 50g paste:


1 small onion, finely chopped, 3 garlic cloves, chopped, 1 large tomato, blended 1 tbsp. tomato purée, 80-100ml coconu milk, 200g chicken, prawns, firm fish vegetable or other
