The complex layers of flavour in this Japanese-style sauce all sing together harmoniously to create such a chorus of comfort. The sweet tang of apple, deep umami of white miso paste, soy and black vinegar, alongside the warmth of a curry spice blend, are perfectly complemented by mellow coconut milk and the background piquancy of chilli. Simply add the whole spices from the sachet for extra layers of flavour.

The origin of Japanese Katsu curry is a story of global migration and sharing of different culinary traditions. Indian spices were introduced to Japan which influenced the dish, we now know, as ‘katsu’. An early iteration of this dish is said to have been eaten by merchant sailors during their long sea voyages in the East. Curry powders and spice blends would be thickened with a roux and combined with ingredients introduced from the Americas such as chilies, potatoes, and tomatoes.

Our Japanese Katsu Curry, which uses a curry spice blend, sweet tomato and red chilli, takes inspiration from early iterations of the dish and is an ode to katsu’s history.

Cooking Instructions

3 Simple Steps | Ready in 10 mins

If using prepared breaded chicken, cook according to the instructions on the pack.

  1. Heat 1 tbsp oil in a small pan, add the spices and cook for 20 seconds (using the chilli from spice pouch for extra heat).
  2. Add the base sauce and simmer for 1 minute.
  3. Add the main sauce and simmer for 2-3 mins. Serve sauce with the breaded chicken and garnish with sliced spring onions.

For other protein or vegetables, cut into generous pieces.

  1. Heat 1 tbsp oil in a small pan, add the spices and cook for 20 seconds (using the chilli from spice pouch for extra heat).
  2. Add the protein or vegetables and brown lightly (if using fish, or seafood hold this back and add this along with the main sauce in step 3). Add the base sauce and simmer for 1 minute.
  3. Stir in the main sauce and simmer for another 3-5 minutes, or until the protein or vegetables is cooked through. Garnish with sliced spring onions.

Please ensure food is fully cooked and piping hot throughout before serving. As appliances may vary, these are guidelines only.

If you don’t like whole spices, grind these in a pestle and mortar and add them at step 3 (before simmering). Alternatively, if you left the spices whole, remove them with a spoon before serving.

Use these handy tips to customise your dish


Serve with shredded white cabbage and toasted sesame seeds.

Add a handful of halved snow peas or grated carrots for a change.

Try cooking with diced chicken thigh, carrot and potato to make a Japanese-style chicken curry.

Try breading and deep-frying roasted celeriac or firm tofu for a great vegetarian option.

Garnish with shredded nori and crispy onions for a hit of umami.
