Thai Massaman Chicken Tray Bake
- 1 pack of The Spice Tailor Thai Massaman Curry
- 2 chicken breasts, cut slashes into the breasts
- 1 small red pepper, cut into cubes
- 150g tenderstem broccoli, trimmed
- 50 ml concentrated chicken stock
- 30g roasted cashew nuts or peanuts, crushed
- Lime juice to serve
- Preheat the oven to 220°c.
- Mix the Massaman sauces from the 2 packets together in a bowl and add the chicken stock.
- Place the chicken breast into an ovenproof dish or roasting tin.
- Pour the sauce over the chicken and rub into the slashes.
- Scatter the vegetables around the chicken, place into the preheated oven and cook for 20-25 minutes - or until the chicken is cooked and charred around the edges.
- Remove from the oven and sprinkle with nuts and a squeeze of lime juice if desired.
