Origin Story
The Southwestern Indian state of Kerala is famed for its abundance of beautiful coconut trees and its lush spice gardens. The region has a truly fantastic cuisine, which builds on the wealth of delicious local ingredients, as well as on rich and varied historic influences. Our Keralan-style Coconut Curry Paste, which is inspired by the cuisine of the Indian state, is a celebration of all the things we love about the flavours of Kerala.
Product Information
Recipe Cooking instructions: Cut the meat, fish/seafood or vegetables into generous pieces.
1. Heat 1 tbsp of oil in a pan, add the spices and cook for 20 seconds (use chilli from spice pack for extra heat), then add the coconut milk, tomato paste, all the curry paste and bring to a simmer while stirring to disperse paste.
2. Add the meat or vegetables and simmer for 10 minutes – or, if using fish or seafood, 6-10 minutes – stirring gently.
3. As the finishing touch, add the cream and simmer for 3 minutes, or until meat or other protein is cooked through.
Serves 4 with naans, rice or parathas.
Please ensure food is fully cooked and piping hot throughout before serving.
Use these handy tips to customise your dish:
- Try fish steaks for a fuller flavour.
- Make with seasonal vegetables and rice noodles for a great vegetarian meal.
- Add a handful halved baby tomatoes for a change.
- Finish the curry with a little roasted, flaked coconut.
- Add a little tamarind, vinegar or lime juice for extra tang.
A mild coconut curry paste with onion and whole spices in individual pouches.
Store in a cool, dry place. Once opened refrigerate and consume within 3 days. Not suitable for microwave use.
